Ingredients
  

  • A whole trout cleaned and gutted, about 1½ lbs
  • 1 cup of almond meal
  • Salt and pepper to taste
  • Zest of one lemon
  • Fresh herbs like dill, parsley or rosemary
  • 2 cloves of garlic crushed
  • Olive oil for drizzling
  • Fresh lemon slices

Instructions
 

  • Preheat the oven to 400°F (200°C). Whilst heating, start preparing the trout by seasoning both the interior and exterior with salt and pepper. A dash of these quintessential seasonings on the inside of the trout does wonders!
  • In a separate bowl, mix the almond meal with the lemon zest, crushed garlic, finely chopped fresh herbs, and a sprinkle of salt. This aromatic combination is our heart-healthy almond crust, which steals the show!
  • Stuff our seasoned trout with fresh lemon slices and generously coat it with our almond meal mixture. No spot should feel left out!
