Ingredients
  

  • 4 lamb chops
  • 1/2 cup shelled pistachios finely crushed
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • A handful of fresh rosemary sprigs
  • Salt and black pepper to taste
  • Zest and juice of one lemon
  • 1 tablespoon Dijon mustard.

Instructions
 

  • Preheat your oven to 200°C.
  • Season the lamb chops generously with salt, crushed black pepper, and minced garlic.
  • In a separate bowl, mix crushed pistachios, lemon zest, and chopped rosemary.
  • Brush each chop with Dijon mustard, then press the pistachio mixture onto the lamb chops, ensuring they’re well coated.
  • In an ovenproof skillet, heat the olive oil over medium heat. Add the lamb chops and sear each side for about 2 minutes until golden brown.
  • Transfer the skillet to the preheated oven and bake for 10-15 minutes depending on how you prefer your lamb chops.
  • Drizzle with fresh lemon juice before serving.

Notes

For an appealing finish, garnish the lamb chops with extra crushed pistachios and rosemary sprigs.
For a vegetarian version, use eggplant slices or portobello mushrooms instead of lamb.
Consider poppy seeds or almond flakes if you’re short on pistachios.
